my zucchini and ricotta pasta sauce (la mia salsa di zucchini e ricotta)

ingredients for 6:

  • 500 g zucchini
  • 2 cloves garlic
  • 1/3 tsp nutmeg
  • 4 tbsp ricotta cheese
  • olive oil
  • salt and pepper
  • fresh herbs (parsley, mint, basil, rosemary, oregano)

cooking directions:

Cover the bottom of a frying pan with olive oil and sauté the sliced garlic on medium heat for about 5 minutes; salt and pepper to taste. Add the chopped zucchini (sliced in rounds or in matchsticks) and the chopped herbs, and cook for 20 minutes. Add the ricotta and 2 tbsp of the pasta water to make the sauce more liquid.
